FROM THE FRUIT TO THE CACAO BEAN

A careful process that preserves the aroma, quality, and essence of Peruvian cacao.

1. Drying

The fermented beans are sun-dried for 3 to 5 days until they reach the ideal moisture level.

2. Resting

They are then stored in sacks to concentrate aromas and flavors before continuing the process.

3. Selection

The best cacao beans are cleaned and selected to ensure a superior raw material.

4. Roasting

The cacao is roasted between 120 and 140 °C to enhance its flavors and prepare the bean.

FROM THE BEAN TO CHOCOLATE

Each stage transforms cacao into a chocolate bar with shine, texture, and its own character.

5. Winnowing

During roasting, the flavors that began during fermentation acquire their final identity.

6. Mixing

The nibs are combined with cacao butter, panela, or sugar until a smooth paste is achieved.

7. Tempering

The paste is worked at controlled temperatures to achieve shine, texture, and stability.

8. Molding

The chocolate is poured into molds, refrigerated, unmolded, and then carefully packaged.
